Rotisserie is a traditional cooking technique that brings out the very best of the ingredients.
The roasted meat is served with different types of bread, such as levain, brioche buns and wheat tortillas.

We use a horizontal rotisserie with multi-skewers to achieve maximum effect for our raw materials.
We focus mainly on farm chicken, pork side and prime rib.
You could say we have one foot in New York and the other in East London.
However, there is a distinctly European feel to Mama and S2’s mix of different cuisines that feels perfect for the food we cook and also love to eat.
Mama is run by Marco Baudone, who previously worked at Le Rouge, Operakällaren, F12, Riche, Gualtiero Marchesi (Milan) and Restaurant Guy Savoy (Paris).
